Why is the audio missing from my students' assignments?

Audio is never part of an assignment by default. You need to check the ‘Audio’ option on the 'Create Assignment' form when you set up the assignment (see the picture below for reference). If you did not do this, delete the assignment and create a fresh version taking care to enable the Audio option.
